Tropical Nut Bread

A moist and delicious bread that's especially good with
pineapple cream cheese.
Ingredients:
- 2/3 cup sugar
- 1/3 cup vegetable shortening
- 2 eggs
- 1 cup mashed ripe bananas, about 2 medium
- (1) 8-oz can crushed pineapple, drained
- 1/2 cup coconut, optional
- 1 tsp vanilla
- 1/2 cup chopped Macadamia nuts
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Directions:
Preheat oven to 350°F. Grease a 9" x 5" loaf pan. In a large
bowl, cream sugar and shortening until fluffy; beat in eggs. Stir in mashed
bananas, drained pineapple, coconut, vanilla, and nuts. In a medium bowl,
combine flour, baking powder, baking soda, and salt. Stir into banana mixture
until smooth. Spoon into prepared pan. Bake 50 to 60 minutes in preheated
oven. Remove from pan; cool on a rack. Wrap airtight in foil or plastic wrap.
Let stand overnight for easy slicing.
Makes 16 slices
