Cooking Instructions for Fresh Pasta

Ingredients:
- 1 lb fresh pasta
- 4-6 quarts boiling water
- 1 Tbsp salt, optional
Directions:
Bring water to a full boil. Add salt. Slowly add pasta, separating the strands
or macaroni. Try not to interrupt the boiling process. Quickly bring back
to a full boil. Stir gently, but completely, with a wooden utensil. Fresh
pasta will cook very quickly; time varies according to the thickness and shape
of the pasta. Start testing by tasting as soon as the water returns to a boil.
Cook only until "firm to the bite." Drain immediately in colander
and combine with sauce.
Tips:
- Salt is optional if using highly seasoned sauce or cheese.
- A splash of oil added to boiling water will help keep strands from sticking
together.
- To prevent overcooking pasta, stop cooking when you think pasta is still
a little underdone.
- A small amount of cold water will stop the cooking process, but be careful
not to cool pasta.
- For best results, as soon as the pasta is done, drain it, sauce it, and
serve it!
