Oriental Roast Beef

Ingredients:
- 3-4 lbs DLM Natural Beef from Coleman Beef Round Roast
- 1/3 cup soy sauce
- 1/3 cup dry sherry
- 1/3 cup lime juice
- 2 Tbsp Vera Jane's Extra-Virgin Olive Oil
- 1 Tbsp minced ginger
- 1 Tbsp honey
- 2 cloves garlic, minced
Directions:
Combine soy sauce, sherry, lime juice, oil, ginger, honey and garlic. Place
beef round roast in plastic bag; add marinade, turning to
coat. Tie bag securely and marinate in refrigerator for 6
to 8 hours (or overnight, if desired), turning occasionally.
Remove roast from marinade; reserve. Place roast on rack in
open roasting pan. Insert meat thermometer so bulb is centered
in the thickest part. Do not add water. Do not cover. Roast
in oven at 325 degrees F. (slow) until thermometer registers
135 degrees F. Allow 20 to 22 minutes per pound. Brush roast
with reserved marinade during last 20 minutes of cooking.
Carve into thin slices.
