Apple Bread

Use your favorite baking apple for this truly moist bread.
Ingredients:
- 3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1 cup oil
- 2 cups sugar
- 3 eggs
- 1 tsp vanilla
- 3 cups chopped apples (5-6 medium)
- 1 cup chopped walnuts
- 2 tsp sugar, optional, or 2 tsp apple or currant jelly, optional
Directions:
Preheat oven to 350 degrees F. and grease two 9-inch by 5-inch loaf pans.
Combine flour, baking soda, salt and cinnamon. Set aside. Beat oil, sugar,
eggs and vanilla until light and thick. Add dry ingredients. Using the mixer,
fold in the apples and walnuts.
Pour batter into two greased loaf pans and bake for 55 minutes or until a
cake tester inserted in the center comes out clean. Cool slightly and remove
from pans. While warm, sprinkle with an additional 2 tsp sugar or glaze with
apple or currant jelly, if desired.
Note: Our favorite apples for this bread are McIntosh or Golden
Delicious.
