Smoked Turkey and Watercress Sandwich

Great with Curried Apricot Mayonnaise!
Ingredients:
- 8 pita bread rounds
- 1.5 lb sliced smoked turkey
- 2 cups watercress, trimmed
- 8 plum tomatoes, sliced
- Curried Apricot Mayonnaise - click for recipe
Directions:
Preheat oven to 350 degrees F. Place pita bread on baking sheet and heat
in oven until just warm, about 5 minutes. Cut rounds in half and form pockets.
Place in napkin-lined basket and keep warm.
Arrange turkey, watercress and tomatoes on platter. Place mayonnaise in a
bowl. Allow diners to assemble their own sandwiches.
Makes 8 servings
