Italian Spinach Pasta Salad

Salad Ingredients:
- 2.5 oz. fresh spinach leaves, washed and patted dry
- 8 oz. linguine, cooked at dente and cooled to room temperature
- 6 oz. provolone cheese, cut into julienne strips
- 5 oz. pepperoni, thinly sliced
- 1 red onion, thinly sliced
- 1 red bell pepper, cut into julienne strips
- 1 medium zucchini, sliced or cut into julienne strips
- Black olives, preferably Calamata
Dressing Ingredients:
- 1 medium clove garlic, finely minced
- 1/2 cup red wine vinegar
- 6 Tbsp olive oil
- 3/4 tsp salt
- Freshly ground pepper
- 1/2 cup fresh parsley
- 1/2 tsp dried oregano, or 1 tsp fresh oregano leaves
- 1 tsp minced fresh basil or 1/2 tsp dried basil
Directions:
In a small bowl or the work bowl of a food processor, combine minced garlic
and vinegar. Add oil, salt, pepper and herbs; combine.
In a large bowl, combine salad ingredients. Add dressing and toss gently
to coat. Taste and correct seasoning. Serve immediately.
Do Ahead Tip: Salad ingredients can be prepared in advance and tossed
with dressing just before serving.
Makes 4 entrée servings
