Queen's Ribs

DLM's own boneless ribs are very lean, so the cooking time
will not be as long as the traditional spareribs.
Basting Sauce for Queen's Ribs: (Makes enough for approximately
10 ribs)
- Combine the following ingredients in a bowl:
- 3 tsp brown sugar
- 1/4 cup soy sauce
- 1 clove fresh garlic, minced
- 1/2 tsp (prepared) mustard
- 3 Tbsp ketchup
- Dash of lemon juice
Directions:
To roast in the oven:
Preheat the oven to 350°. Place the ribs in a shallow baking pan and bake
for 35 minutes per 1/2 - 3/4" thickness. Turn the ribs halfway through
for even browning. Glaze the ribs with the sauce the first time they are turned
and again about 5 minutes before you take them out of the oven. They will
feel firm to the touch when done.
To barbecue on a charcoal or gas grill:
Preheat the gas grill until it is hot, about 20-25 minutes or until the coals
in a charcoal grill are gray. Arrange the ribs on the grill. Sear over hot
coals. Move the ribs away from the heat and cook them indirectly for an additional
20-25 minutes per 1/2 - 3/4" of thickness. Baste with sauce the last
10 minutes turning 2 or 3 times for even browning. The ribs should be cooked
through but still juicy when done. Serve immediately.
Hint: For ease of serving, the ribs may be cut into individual ribs before
cooking.
