Seafood à la Ritz

Ingredients:
- 1 lb white seafood fillets (Tilapia, Gray Sole, Haddock, Cod, or Trout)
- Salt & freshly ground pepper, to taste
- 1 lemon, freshly squeezed
- 2 Tbsp butter
- 1/2 cup cracker crumbs (rich, buttery, round crackers)
Directions:
Season fillets lightly with salt, pepper, and lemon juice. Dip in melted
butter, then in cracker crumbs. Place in shallow baking dish with 1 tablespoon
of water. Bake in preheated 450º F oven, 10 minutes per inch-thickness of
fish. Serve fillets with lemon wedges.
