Cranberry Conserve

Ingredients:
- (1) 12 oz package cranberries
- 1 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup golden raisins
- 2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1 cup water
- 1 apple, cored and chopped
- 1/2 cup pecan halves, optional
Directions:
Combine cranberries, sugars, raisins, spices and water in a 2-quart saucepan.
Cook over medium heat until berries pop, about 15 minutes. Stir in apple;
reduce heat and simmer, uncovered, until thick, about 15 minutes. Refrigerate,
covered, for up to 2 weeks. If desired, stir in nuts before serving.
NOTE: This conserve may be quite juicy and will thicken
slightly the longer it sits. If you prefer a thicker mixture, up to one additional
cup of cranberries may be added to the recipe before cooking without changing
the other ingredients. Fresh cranberries can be refrigerated up to one month.
Freeze cranberries in their orginal, unopened package and place in extra plastic
wrap. When using frozen cranberries, don't thaw them; follow recipe directions
using frozen berries.
