Beautiful and delicious! Too much trouble to make the crust?
Substitute (1) 17-oz package refrigerated slice-and-bake sugar cookies.
Ingredients:
- 1 1/2 cups flour (for crust)
- 1/4 cup sugar (for crust)
- 1/4 cup butter or margarine (for crust)
- 1/4 cup vegetable oil (for crust)
- 3 Tbsp cold water (for crust)
- (2) 3-oz pkgs cream cheese, softened
- 1/4 cup sugar (for cream cheese layer)
- 1/2 tsp vanilla (for cream cheese layer)
- Assorted sliced fresh fruit to cover, such as sliced peaches, strawberries,
kiwi, blueberries
- 1/2 cup currant jelly (for glaze)
- 1 Tbsp water (for glaze)
Directions:
Crust: Preheat oven to 375°F. Combine flour and sugar; cut
in butter with a pastry blender until mixture resembles coarse meal. Stir
in oil with a fork until all ingredients are moistened. Add water 1 Tbsp at
a time, mixing with a fork. Form dough into a ball and place ball on a cooking
sheet sprayed with nonstick vegetable spray. Use a lightly floured rolling
pin to roll out to an 11" circle. Bake until lightly browned, 12-14 minutes.
Cool on baking sheet for 10 minutes; remove to wire rack to cool completely.
Cream Cheese Layer: Combine ingredients and beat until smooth.
Place cooled crust on a serving platter and spread with cream cheese mixture.
Top with fruit. Combine jelly and water in a small saucepan and heat over
low heat until jelly melts. Spoon evenly over fruit. Refrigerate before serving.
Best served within 3 hours of preparation.
