Pumpkin Cranberry Bread

Serve with Cranberry Butter for an extra special treat.
Ingredients:
- 2 eggs
- 2 cups sugar
- 1/2 cup vegetable oil
- 1/2 cup canned pumpkin
- 2.25 cups flour
- 1 Tbsp pumpkin pie spice
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh cranberries, coarsely chopped
- 1 cup coarsely chopped walnuts
Directions:
Preheat oven to 350 degrees F. Grease and flour two 7.75x3.75x2.75-inch pans.
Beat together eggs, sugar, oil and pumpkin; set aside. Combine flour, pumpkin
pie spice, baking powder and salt in a large bowl; add pumpkin mixture and
mix just until dry ingredients are moistened. Stir in cranberries and nuts.
Spoon batter into prepared pans. Bake 1 hour or until a tester inserted in
the center comes out clean. Cool in pans on a rack for 10 minutes; remove
from pans to cool completely.
