New York Apple Cobbler

This recipe, from Maida Heatter's Book of Great Desserts,
is unusual, wonderful and easy to prepare -- the secret to its unique flavor
is grated cheddar cheese in the crust.
Topping Ingredients:
- 1/4 tsp salt
- 6 oz natural cheddar cheese (mild or sharp); grated
- 1 cup flour
- 1/2 cup firmly packed light brown sugar
- 1/2 cup butter
Apple Mixture:
- 3 lbs tart apples, such as Granny Smith
- 3/4 tsp nutmeg
- 1/2 cup firmly packed light brown sugar
- 2 Tbsp brandy (optional)
- 1/2 tsp cinnamon
Directions:
Butter a 2 qt. baking dish and set aside. Use an electric mixer to beat together
the grated cheese and butter. Blend in the salt, flour, and sugar; set aside.
Peel, quarter, and core the apples. Slice each apple quarter into 5-6 slices.
Toss the slices with the sugar, cinnamon, nutmeg and optional brandy. Place
the slices in the prepared dish and spread evenly. Use your fingers to crumble
the topping over the apples, covering them as completely as possible. Gently
press down on the topping to make a smooth layer.
Bake in a preheated 350 F oven, 40-50 minutes or until the apples are tender
and the topping is golden brown. Serve warm as is, or topped with ice cream.
NOTE: The cobbler can be assembled several hours before needed,
covered with plastic wrap and left on the counter until ready to bake.
