Parmesan Fish Fillets

Ingredients:
- 2/3 cup parmesan cheese, preferably freshly grated
- 1/4 cup flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. paprika (optional)
- 1/4 cup milk
- 1 egg, beaten
- 2 lbs. skinless fish fillets, 1.25" thick (such as
catfish, cod, or tilapia)
- 1/4 cup butter or margarine, melted
- 1/3 cup sliced almonds
Directions:
Combine parmesan, flour, salt, pepper and optional paprika in a shallow dish.
Combine milk and eggs in another shallow dish. Dip fresh fish into milk/egg
mixture, then dredge in cheese/flour mixture. Place fillets in a lightly greased
baking dish. Drizzle fillets with butter, and sprinkle with almonds. Bake
at 350 degrees F. for 20 minutes or until done.
NOTE: Substitute any mild seafood fillets that are 1.25"
thick such as cusk, cod or ocean pout.
