Baked Chèvre with Tomatoes and Garlic Toasts

Ingredients:
- Peasant Sauce - click for recipe
Chèvre:
- (2) 5.5-6 oz discs of goat cheese (or logs) at room temperature
- 1 Tbsp chopped fresh parsley
Garlic Toasts
- (1) 20-24-inch loaf crusty French bread
- 1/2 cup unsalted butter, room temperature
- 4 tsp finely minced garlic
- 2 Tbsp chopped fresh parsley
Directions:
To Prepare the Garlic Toasts: Preheat the oven to 300 degrees F.
Split the bread lengthwise. Cut each half into 3/4-inch pieces. Place crust
side down on a baking sheet. Combine butter, garlic and parsley; spread on
top of each piece of bread. Bake until golden brown, about 20 minutes. Toasts
may be prepared in advance and reheated 3-4 minutes before serving.
Assembly: Preheat the oven to 400 degrees F. Mold the softened chèvre
into a smooth round 4-5 inches in diameter and 1.5 inches thick. Place the
cheese in the center of a medium-size, round, ovenproof dish. Spoon the warm
tomatoes around the chèvre. Bake for 12-15 minutes or just until the cheese
starts to melt but still holds its shape.
Sprinkle with fresh parsley and serve with garlic toasts.
Makes 8-10 servings
