Peasant Sauce

Use Peasant Sauce any time a full-flavored tomato sauce is needed on pasta, a baked potato or veal parmigiana.

Ingredients:

  • 1/2 cup fruity olive oil
  • 3 large yellow onions, chopped medium fine
  • 1 Tbsp salt
  • 2 1/2 Tbsp tomato paste
  • (2) 28-oz cans DLM San Marzano Whole Peeled Tomatoes D.O.P.

Directions:

Heat olive oil in large saucepan over medium-high heat until sizzling hot. Add onions and sauté, stirring frequently for 5 minutes. Reduce heat to medium and cook, stirring frequently just until the onions begin to turn golden brown, about 25 minutes.

Stir in the salt and tomato paste, then canned tomatoes. Simmer uncovered for 30 minutes. This sauce freezes well.

Makes 4 to 6 cups
