Roast Turkey Breast

This method results in a moist, juicy breast with a golden
brown exterior.
Ingredients:
- Turkey Breast
- Butter (margarine may be substituted)
- Freshly ground pepper, if desired
Directions:
Preheat oven to 325 or 350 degrees. Rub turkey breast with softened butter
or oil. Sprinkle with pepper, if desired. Roast skin side up, in an uncovered
pan for 20-22 minutes per pound, basting every 15 minutes with the pan juices.
The turkey breast is done when a meat thermometer registers 170 degrees. (If
the turkey breast has a pop up timer, use it as a guide.) A meat thermometer
is the best guide to doneness.
Let the turkey breast sit for at least 10 minutes before slicing.
