Dried Tomato Slices & Cheese on Toasted French Bread

Serve these as an appetizer or as an accompaniment to a
salad course.
Ingredients:
- French Bread
- Olive Oil - preferably extra virgin
- Dried Tomato Slices
- Grated Cheese such as Asiago,
Pecorino, Romano, or Mozzarella
Directions:
Slice French bread. Brush the cut surface with olive oil, and place under
the broiler until brown. Turn the bread. Brush with olive oil, and return
to the broiler to toast. Place dried tomato slices on the cut surface; top
liberally with cheese. Place under the broiler until the cheese melts. Serve
hot.
