Tomato and Onion Salad

Use vine-ripened garden or hydroponic tomatoes and sweet
onions for this spectacular, easy summer salad.
Overlap slices of tomato and thinly sliced sweet onion on a platter. Drizzle
with vinaigrette (recipe follows) and chopped fresh basil leaves.
Vinaigrette:
- 1 small clove garlic, minced
- 1/2 tsp. salt
- 1 Tbsp. fresh lemon juice
- 2 Tbsp. wine vinegar
- 1 Tbsp. Dijon mustard
- 1/2 cup olive oil
- Freshly ground pepper to taste
Mash garlic and salt together in a small bowl. Whisk in remaining ingredients.
Store in the refrigerator; serve at room temperature.
Makes 3/4 cup vinaigrette
