Dressed Baked Orange Roughy

This delicious protein/starch combination needs only a crisp
salad or green vegetable for a complete meal.
Ingredients:
- 1.5 lbs orange roughy fillets
- 4 cups fresh bread crumbs made from 8 slices bread, preferably whole wheat
- 1/4 cup minced onion (1/2 medium onion)
- 1 Tbsp lemon juice
- 1/2 tsp dried marjoram
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 Tbsp butter or margarine, melted
- 3-4 Tbsp Parmesan cheese, preferably fresh grated
Directions:
Preheat oven to 400 degrees F. Place the fillets in a single layer in a lightly
oiled, shallow baking dish. Combine bread crumbs, onion, lemon juice, marjoram,
salt, pepper and butter in a bowl and mix well. Top the fish with this mixture
and sprinkle Parmesan over all. Bake at 400 degrees F. for about 15 minutes
or until the fish is opaque and flakes when tested with a fork.
