The DLM Gluten-Free Food Lovers’ Club meets from 3–4:30 p.m. the second Saturday of each month except March, November, & December in the Culinary Center next to our Washington Square store. Our next meeting will be Saturday, May 10, 2014 from 3-4:30 p.m. Bring your favorite G-F entrée recipe and we will choose ONE for the makeover, using the Club’s mission statement “promoting G-F as a lifestyle choice while exploring nutritious, new foods that taste good" as our guideline. We will sample my favorite G-F makeover recipe, FISH TACOS WITH CILANTRO LIME RANCH SLAW. Copies will be provided.

In conventional chillers, chickens may absorb 7 to 8% of their body weight in added water - and that water may contain chlorine or contamination from other chickens. GRD-The Full Range of Systemic Autoimmune Diseases with Diverse Manifestations?
The term gluten-related disorders (GRD) includes a whole range of systemic autoimmune diseases with diverse manifestations. GRD are characterized by abnormal immunological responsiveness to ingested gluten in genetically susceptible individuals. Celiac disease (CD) or gluten-sensitive impairment of abnormal functioning of the intestinal tract is the best-known GRD.
Conditions occurring outside of the intestine include dermatitis herpetiformis (DH) and neurologic dysfunction. These conditions have only recently become accepted because they show no abnormality of the intestinal tract. This research of gluten-related neurologic dysfunction or disorders of the brain, spine, and the nerves that connect them reviews the spectrum of neurologic manifestations in GRD. Recent advances in their diagnosis, and a look at their possible pathophysiologic mechanisms, are discussed.
I believe the feelings of lethargy and the difficulties in concentration I have after exposure to gluten are my gluten-related neurologic dysfunction symptoms and are another form GRD and separate from CD. I also hear other members of the Club complain about the same symptoms. I am happy research in this area is being performed.
