Irish Soda Bread–Gluten Free
This Irish Soda Bread is a gluten-free version of the spoon bread I made for years BGFD (Before Gluten-Free Diet). I picked Bisquick for two reasons: price point and convenience. Using this flour is easy and almost foolproof. It is not quite as authentic as the Bakery's version. I chose a moister, conventional loaf that holds together well and is easier to slice. My loaf is golden because I included the yolks. If you want a whiter loaf, separate out two yolks and keep them for another recipe. Marburger Farm Dairy Gourmet Buttermilk is a natural leavening product which makes the Irish Soda Bread rise better. It is acidic and reacts with baking soda, which is alkaline, to create carbon dioxide bubbles in the batter making it lighter. Beware: some brands use thickening agents and may not provide this extra natural lift.

You can celebrate St. Patrick's Day gluten-free style at home with a meal from DLM. Our Storemade Corned Beef Brisket is served with Steamed Cabbage and Red Skin Potatoes. If you do not want to bake the Soda Bread recipe, just pick up a bag of Tina’s Sweet Treats Dinner Rolls. If you have a sweet tooth, select a St. Patrick's Day cupcake, also from Tina’s, for dessert. Please place your order for the dinners by this Saturday at our Deli for pickup March 15-17. Tina will be delivering St. Patrick’s Day cupcakes, vanilla, chocolate, and green velvet, along with rolls to complete your meal.
