RECIPE OF THE MONTH
Apricot Almond Brown Rice Pilaf Gluten Free
I often hear the complaint, “Rice is boring; I'd rather have mac and cheese.” This dish is anything but boring. The slightly nutty taste of brown rice is accentuated by almonds. The acidity of the dry white wine and lime juice is nicely counterbalanced by the dried apricots.

 
 
 
MEETING THIS SATURDAY WITH KELLI PITRONE RD, LD
The DLM Gluten-Free Food Lovers’ Club meets from 3–4:30 p.m. the second Saturday of each month except March, November, & December in the School of Cooking next to our Washington Square store. Our next meeting will be Saturday, January 11, 2014 from 3-4:30 p.m. exploring how perimeter shopping can equal healthy, fast GF meals. Focusing on the Produce department this month, we will sample Squash with Fruits and Nuts made with acorn squash, cranberries, golden raisins, shredded coconut, and sliced almonds. Kelli will explain the health benefits of these items while you explore their delicious tastes. Kelli grew up in the Dayton area. She counsels patients to help them reach their health and wellness goals, and specializes in gluten-free cooking and baking.

Domaine de Bernier Chardonnay Val de Loire
Bernier Chardonnay is a modestly priced wine that delivers a slightly different fresh, clean taste than you might expect from a Chardonnay. It pairs nicely with seafood and lighter fare. If cooking with wine is new for you, this is a great start for cooking adventures. If you have heard tales of wheat paste-sealed barrels, that is a thing of the past. Most wines are from aluminum barrels as fresh taste is prized by today’s winemakers.
 
Lundberg Family Farms Organic Long Grain Wild Rice
In addition to its farms, Lundberg owns and operates a dryer, mill, rice cake production facility, processing facility, and storage warehouse. All of the products produced within their facilities are gluten free which means zero chance of cross contamination from the field through processing. I like the taste and believe it cooks and tastes better than most brown rice brands.
 
Kitchen Basics Unsalted Vegetable Cooking Stock
This stock is labeled “No Glutens” and contains no MSG. The ingredients are: vegetable stock (onion, celery, carrot, mushroom, and red pepper), and tomato paste. There are no added flavorings, artificial or natural. I think the mushrooms give the broth an added richness missing from other brands that do not add mushrooms. Their ingredients must not contain milk*, egg*, peanuts*, gluten*, soy, tree nuts, fish, shellfish, or corn. *Each production run is tested to a tolerance of 5 ppm.
 
 
Changes in DLM Gluten-Free Food Lovers’ Club Meeting Format
Something new for 2014! This month's attendees to the club meeting will receive a folder with information and a recipe. Each month I will have new information and a recipe for your folder. I will have prepared dishes and new prepackaged manufacturers’ goods to taste as well. Come to Saturday’s meeting to experience the new format and tell me what you think.
