Whether you are making a cheese plate, homemade macaroni, a gourmet grilled cheese, or enjoying a late night snack, Deer Creek Cheeses have been a huge hit this summer at The DLM Cheese Shop. We met the folks behind Deer Creek Cheese Company, a Wisconsin favorite, a few years ago. The more we taste these great cheeses, the more varieties we bring in and present to you—our fellow cheese lovers!

The Deer Creek Cheeses that are most popular at our counters this summer are The Robin, The Rattlesnake, The Doe, The Blue Jay, and The Stag. The flavor profiles of each are uniquely different and stunning!

The Robin: Named after the Wisconsin state bird, this cheese is a classic, handcrafted original Colby that is firm with a fresh buttery taste and a pleasantly salty finish. Try it with Dayton’s own Trotwood Lager by Warped Wing!

The Rattlesnake: Watch out, this cheese can bite ya! It's a spicy, sweet, tropical tasting cheese that is HOT! Infused with habanero pepper, it's great melted down and served with DLM White Corn Tortilla Chips and an ice cold Corona.

The Doe: This cheese is a creamy, handcrafted bandage-wrapped Cheddar marbled with Madagascar Bourbon vanilla bean. It's great paired with a bite of shortbread and cup of coffee … or Champagne!

The Blue Jay: This is one of our favorites as it's a bold, yet utterly creamy blue cheese infused with the flavor of juniper berry. Try it melted on a DLM Natural Beef New York Strip paired with a red Zinfandel for a truly decadent meal.

The Stag: This internationally awarded Cheddar is truly a gem. Select vats of The Fawn (a young Cheddar cheese) are chosen for further aging to allow for more intense, bold flavors of The Stag to develop. It has nuances of strong toffee and butterscotch notes, yet still has a smooth finish. It's best paired with red wine or an amber lager.
