Know Your Bacon

Canadian bacon is leaner, it’s meatier, and it’s a great way to get your bacon fix with less saturated fat. Think of it as a cross between ham and bacon. It’s the No. 1 choice for Eggs Benedict, but don’t underestimate the flavor it can bring to French toast and poached eggs.

This is the bacon we use in some of our signature recipes, like our Pine Club Salad. It’s nitrate/nitrite free, made with duBreton Natural Pork. Add it to a cheeseburger, wrap around a meatloaf, or add it to a grilled cheese sandwiched using our Farmhouse bread with Barber’s 1833 Vintage Cheddar.
In Italian, gaunciale means "pillow" but we consider ours to mean "wicked good" jowl bacon! These crispy, salty cubes are often sautéed and added to pasta dishes, such as spaghetti carbonara and bucatini all’amatriciana. Or, ask for it on a Naples-Style Pizza (at DLM Springboro and Washington Square).
