2 lbs fillet of salmon, small bones removed |
1 Tbsp soy sauce |
Tabasco sauce, to taste |
Juice of 4 limes |
2 Tbsp chopped fresh dill |
1 clove garlic, pressed |
Salt and freshly ground pepper, to taste |
1 cup Vera Jane's Extra-Virgin Olive Oil |
Dill sprigs for garnish |
Place salmon fillets in a glass dish. Combine remaining ingredients and pour over the salmon. Marinate 30 minutes to 1 hour. Grill skin side down for approximately 8 minutes, then turn gently onto flesh side for 2 more minutes (just long enough to create sear marks).
Garnish with sprigs of dill, and serve with a drizzle of olive oil.Makes (8) 3-oz servings
