3 Tbsp vegetable oil |
1 tsp salt |
1 tsp grated orange rind |
2 Tbsp orange juice |
Freshly ground pepper, to taste |
1½ lbs orange roughy fillets |
Nutmeg, preferably freshly grated |
Preheat oven to 350ºF. Combine oil, salt, orange rind, orange juice, and pepper in a small bowl. Place fillets in a single layer in a lightly oiled baking dish, and pour the sauce over them. Sprinkle with nutmeg. Bake, uncovered, for 20 minutes or until fish is opaque and flakes when tested with a fork.Makes 4 servings
