1 lb mahi mahi fillets |
1/4 cup dry white wine |
1 Tbsp chopped fresh parsley |
1 Tbsp unsalted butter |
4 drops hot pepper sauce (Tabasco), if desired |
2 tsp fresh lemon juice |
Salt and freshly ground pepper, to taste |
1 clove garlic, minced |
Preheat broiler. Combine all sauce ingredients in a saucepan; heat slowly until butter is melted. Place fillets on the broiler pan; brush with sauce. Broil about 4 inches from heat for 3 to 4 minutes. Turn carefully and brush with more sauce. Broil until fish flakes when tested with a fork. Season as desired. Makes (4) 3-oz servings
