Broiled Tomatoes
| 4 tomatoes, remove stem end and cut into 1/4-inch slices |
| 1/4 cup Vera Jane's Extra-Virgin Olive Oil |
| 1 tsp salt |
| 1 tsp ground pepper |
| 2 to 3 tsp garlic, minced |
| 1½ Tbsp fresh basil, finely chopped |
| 1 Tbsp fresh oregano, finely chopped |
| 1/3 to 1/2 cup Parmesan cheese |
Preheat oven broiler. Cover broiler pan with aluminum foil and coat with nonstick cooking spray. Place tomato slices in a single layer on the prepared pan. Using a basting brush, coat the top of each tomato with olive oil. Season with salt, pepper, garlic, basil, and oregano. Sprinkle Parmesan cheese over the top of the tomatoes. Broil 3 inches from the heat until browned and bubbly, about 3 minutes.
