Lemon Tri-Color Tortellini with Artichokes
| (1) 9-oz pkg DLM Mozzarella & Herb Tortellini Filled Pasta, cooked, drained, and cooled |
| 3 Tbsp Vera Jane's Extra-Virgin Olive Oil |
| 1 Tbsp lemon juice |
| 1/2 tsp fresh ground pepper |
| 1 clove garlic, minced |
| 4 green onions, sliced |
| (1) 10-oz jar DLM Marinated Artichoke Quarters, drained |
| 10 cherry tomatoes, halved |
| Parmigiano-Reggiano, shredded |
Cook pasta according to directions and set aside. Mix olive oil, lemon juice, pepper, and garlic in a large bowl. Add tortellini, onions, and artichokes; toss to coat. Just before serving, add tomatoes and sprinkle with Parmigiano-Reggiano.
