A small local grower from Franklin, Ohio has been selling his mushrooms to Dayton area fine restaurants. This mushroom thrives in cool climates to almost freezing temperatures, where the chill brings out its brilliant slate-blue color. The Blue Oyster Mushroom is a favorite in sautés, having a wonderful tender and meaty texture. They also contain compounds believed to be anti-cancer, anti-tumor, and cholesterol-reducing.

Summer registration begins at 8 a.m. on Wednesday, April 21. Register online, calling the School of Cooking at 937-535-5696, or in person. Jeni Britton from Jeni’s Splendid Ice Cream will be teaching, as well as guest Chef Marilou Suszko from THINKTV Channel 16 “Our Ohio” PBS television show.
Food Safety Tip

Buying food in bulk can be a money-saver. Remember, whatever quantity of food – safe handling is a must. Large packages of perishables like raw meat and poultry can be refrigerated for one to two days, but then the food should be cooked or put in the freezer. From a quality standpoint, it is recommended that frozen meat and poultry be consumed within three to six months.
