Recipe of the Week:

Shrimp, Mushroom, and Artichoke Casserole

This recipe is "company caliber and delicious". It combines the rich tastes of shrimp, sautéed mushrooms, heavy cream, artichoke hearts, and dry Sherry. Pair it with a crisp salad and some crusty DLM Artisan Bread and you have a great Lenten dinner.

More Than a Penny - Hot Cross Buns
"Hot cross buns! Hot cross buns! One a penny, two a penny. Hot cross buns! If ye have no daughters, Give them to your sons. One a penny, two a penny. Hot cross buns!"
- English nursery rhyme

Hot Cross Buns are small sweet yeast buns with raisins or candied fruit, marked on top with a cross of white confectioner's glaze, and traditionally served in England on Good Friday. The English tradition of serving small sweet cakes on Good Friday dates back to the 16th or 17th century, and the cross on top (originally just marked with a knife) dates to the early 18th century. Our Bakery will be making these Honestly Better® Hot Cross Buns during all of Lent. Enjoy them while you can!

Winnemere Cheese
Winnemere is a raw cow’s milk cheese that is washed with a lambic-style beer brewed from Jasper Hill Farm’s own wild yeasts. Wrapped with a thin strip of bark from local spruce trees, this pleasantly aromatic cheese has a great woodsy flavor and creamy, mouth-coating texture. Great paired with a glass of Matilda from Goose Island Beer Company.

101 Optimal Foods

Dave Grotto is a registered dietitian who worked in the natural foods industry for over 25 years, which has given him a wide-angle view of the field of nutrition. He is a freelance writer and is the author of the book, 101 Foods That Could Save Your Life (Bantam-Dell). He hosted the popular live radio program, Let’s Talk Health, CHICAGO! and the television program, Health and Lifestyles Weekly. He is the former director of nutrition education at the Block Center for Integrative Cancer Care in Evanston, Illinois.

If you had the pleasure of attending Dave’s class with Chef Wiley in 2008, then you know how electrifying the class was. With Dave’s banter and Wiley’s cooking the whole atmosphere was educational, fun, and tasty. We have been anxiously awaiting his next book so he can join us again and this time Dave will partner with Chef Carrie Walters and Wiley to prepare recipes from his new book: 101 Optimal Life Foods. The new book features recipes submitted by both Chef Carrie and Wiley, so the material will be very familiar to both instructors. Tuesday and Wednesday, March 2 OR 3 • 6-9 p.m.
