We think Albert Katz is one of the most intelligent producers of extra-virgin olive oil in California. The Suisun Valley, east of Napa, is near the same latitude as Sicily, and the rocky soils there are just right for his groves of Italian varietals of olives. His blend incorporates the Leccino olive, favored by Tuscans for its peppery bite, and the Taggiasca, which yields a smooth, rich mouthfeel. Albert’s efforts illustrate the rapid progress of artisan olive oil production on American soil in recent years. Al takes the cider of Sonoma’s famous apple, the Gravenstein, and using the time-honored Orleans method (slow aging in oak barrels), makes this amazing vinegar—a blend of sweet and acid that’s "spot on". Not only does it taste amazing, apple cider vinegar has gained fame as a folk remedy said to improve digestion, help with weight control, and relieve arthritis. Health benefits aside, you’ve got to see how this vinegar makes your food taste better: making summer slaw or a salad of walnuts, smoked turkey, and goat cheese, etc. Also try pan roasting our DLM Air-Chilled Chicken Breast with a splash of vinegar, apples, and a bit of chicken stock. Doing some of those beautiful scallops from the DLM Seafood department soon? Pan sear them with a little oil or butter, then take them out, and splash the pan (aka deglaze) with this vinegar and add salt and pepper to make an easy pan sauce. When fall comes, keep it in mind for braising, say with pork and leeks. For a kickin’ vinaigrette, whisk a few tablespoons of this vinegar with a teaspoon of DLM Dijon Mustard and a minced shallot. Then slowly whisk in a stream of one of the Katz olive oils (the one mentioned above or Katz Rock Hill Ranch). Shoot for a ratio of 2/3 oil to 1/3 vinegar. Don’t have a whisk? 21st Annual Diaper Derby
There’s still time to sign up your little crawler to compete in DLM’s Annual Diaper Derby! This fun event will be held this Saturday, July 18 at 10 a.m. at all three stores. The best corn around is locally grown in New Carlisle by brothers Ray and Tom Brentlinger on a fourth-generation family farm. Ray applies his agricultural degree from The Ohio State University in his search for the sweetest varieties of corn. Wine 102
We had our first foray into a class featuring wine rather then food, and the class was asked to comment and help plan the next one. The comments were encouraging and very helpful, so we added another hour to the class. George Punter will focus on summer wines and have more food pairings to allow us to taste how wine and food complement each other. Wine will still be the focus, however the class will be tastier!
