Grown in the mountains of Haiti in the Caribbean, Banana Mangos are hand picked, loaded into burlap sacks, and brought down to the packing house by mules. They are pre-cooled and graded by hand, and then they are packed before they are shipped to our stores. The Banana Mango starts out an even light green color, and starts turning a yellowish color as it ripens. Hence the name "Banana Mango". As with the banana, some brown freckles and rub marks (from the burlap bags) will appear, becoming more prominent as the ripening process continues. When the mango has turned golden yellow and gives slightly to the touch, it is fully ripe. A little wrinkling is also normal. The menu includes: Roasted Vegetable and Goat Cheese Terrine – This incredible terrine looks great, tastes great, and is perfect because you make it ahead; a salad of Grilled Pears with Spiced Pecans and Mixed Baby Greens; Spiedinis of Chicken, Lamb, and Beef that has been marinated and then grilled – served with a creamy yogurt cucumber dip; Grilled Vegetable Medley with a drizzle of fresh herb and lemon zest purée; and dessert of Flan (South American caramel custard) with mixed berries.

Hot Off The Grill Asian, Thai
Summer is grilling season, and the School of Cooking is presenting several classes to teach you techniques and tips on how to produce the best grilled food for the season. To "mix it up" a little, Chef Carrie Walters will have two classes that you may not think of as "grilling" opportunities: A class devoted to Asian and Thai grilling along with one that has a Tex-Mex theme. The Asian menu is a mixture of cuisines from the region featuring: Korean Style Short Ribs with Spinach and Sesame; Strip Steaks with Spicy Cilantro Sauce; 5-Spice Chicken; Miso Glazed Salmon; Grilled Bok Choy and Chinese Eggplant; Grilled Star Fruit with Mango Gelato
