Local Produce
We now have asparagus which is locally grown by our friend John Branstrator in Clarksville. The Branstrator Farm has been in the Branstrator family since 1821 when Andrew Branstator (different spelling) bought it for only $3.00 per acre! Taste the difference in a locally grown product and support our local economy.

Athena Melons
Athena Melons are grown in Florida and picked only when they are ripe, for best flavor. They are very sweet, similar to a homegrown cantaloupe. Simply cut the melon open and remove the seeds and strings. It can be served in many attractive ways: cut into halves, quarters, wedges, or cubes; or the flesh can be scooped out with a melon scoop. 2/$4.00 • save $3.98 on 2 with Club DLM card through Sunday, May 17.

Copper River Wild King Salmon
I’m Going Home! It sounds like a song from American Idol, but it’s the tune being played by Mother Nature, beckoning the return of the Copper River King Salmon to the headwaters of their birth. These fabulous eating fish have spent years at sea, gorging themselves for the long journey home to spawn. Once reaching the Copper River Delta near Cordova, Alaska, the fish must wait till the tides are right and start their journey up 300 miles of pristine, glacier-fed rapids and huge vertical ascents twisting through the Wrangell and Chugach Mountains. As salmon begin their final journey up this obstacle course to prepare to mate, their feeding habits diminish. Because the Copper River Salmon's journey is so long, they must store extra fat and oils in order to survive the long trip. This high fat and oil content is why Copper River Salmon are recognized as some of the world's best eating salmon. There are several species of salmon that return to the Copper River, but it is the King Salmon (Chinook Salmon) that is the noble royalty. Look for the first of the year Copper River King Salmon showing up this Saturday. Don’t be fooled by imposters----make sure you are getting the real Copper River King Salmon!

New! Cabot Clothbound Cheddar
Using the pasteurized milk of Holstein cows from George Kempton's neighboring farm in Peacham, Cabot produces these 35-lb clothbound wheels and delivers them to neighboring Jasper Hill Farm within 2 to 5 days for aging maturation. Upon arrival, the Kehler Brothers brush each wheel with melted lard to promote sturdy rind development, and turn the cheese daily for three weeks. The wheels are then turned and brushed weekly as they develop alongside Jasper Hill's own cheese, for 10-12 months. The resulting cheese offers a stunning array of flavors; the firm, slightly crunchy paste is never waxy, and unfolds with layers of toasted nut, toffee, and cooked fruits.
