Seared Salmon with Citrus Soy Glaze

This recipe was featured in Bon Appétit. It is a combination of seared salmon on crispy vegetables with a vinaigrette dressing and a citrus glaze. You can use either the Shetland Farms Farm-Raised Salmon or the King Salmon fillets, which are antibiotic free and fed a diet of certified organic grains and fishmeal. Producer Pietro Brembilla decided he wanted to launch his retail bottle at no other place than Dorothy Lane Market and a handful of other stores! Pietro’s family’s land is located in the Tuscan area of Bolgheri, where the famous “Super Tuscan” wines are produced. He aptly named his oils Sogno Toscano, i.e., "Tuscan Dream", in honor of the beauty of his native Tuscany. DLM Store-Made Corned Beef

For your St. Patrick’s Day dinner we are making our own corned beef. We start off with only the finest cuts of DLM Natural Beef (flat-cut brisket, bottom round, and eye of round) and pickle it with a curing blend of special seasonings and spices for two weeks before it is ready to cook. The only shortcut taken here was that we had to use local leprechauns to produce this product! Roast a slab of this corned beef with a head of cabbage and five pounds of potatoes, and your family and friends won't go hungry for a week! The great thing about it is the leftovers just get better. And think about the Reubens you can make!
