Full of plump shrimp, fennel, herbs, and peppadew peppers tossed in a creamy dressing made with a touch of mascarpone cheese and Champagne vinegar. Try it piled on top of arugula for a main course salad.

If you are a ranch dressing fan, it’s time to switch it up! A green goddess dressing, in my humble opinion, will win over any ranch dressing with its creamy, herby goodness. 3) Oh, Snap (Pea) Salad with Coconut Gremolata
If you are looking for a little more texture, our Oh, Snap (Pea) Salad with Coconut Gremolata is just plain fun to eat! Snap peas, crunchy pea shoots, and edamame tossed with a crunchy gremolata made with toasted coconut and crispy fried shallots.
4) Spring Pea & Pecorino Salad
Although it’s a simple and straightforward recipe, it showcases the quality of each ingredient. What helps bring it all together is the Pecorino Romano cheese. Instead of shredding or grating it, you just kind of crumble or break off little pebbles for a rustic chew that makes this salad special.
