Let me just tell you right now — this recipe for Pumpkin Gingerbread is a keeper! It’s one of those treats that’s great now and later, if you can stop your family from eating it all right away.
Pumpkin Gingerbread is a moist, well-spiced quick bread that is perfect for a chilly morning breakfast on the run, or a late afternoon snack with tea. I have even made it as mini loaves and gave them away as a Christmas gift for friends and teachers.
My family expects it every year around this time, and one of the reasons I still make it is how well it behaves in the freezer. At home, I can cut a slice right off the frozen loaf whenever somebody needs a homemade snack. I like to serve it warm slathered with lemon curd for a special treat.
