Nduja – The Ultimate Salty-Spicy Meat Snack

I want to pronounce it “nudg ya,” but it’s pronounced en-DOO-ya. Which makes sense because of familiarity with its French cousin, andouille. I like to think of it like spicy, spreadable salami. In redneck terms, it’s kind of like the inside of an incredibly high-quality Slim Jim.

Most simply, Nduja is delicious on top of a cracker, on warm toast, or eaten standing up with a spoon. It is also perfect to serve with a cheese course instead of sliced meats.

It is made by grinding up prosciutto and speck, and blending in red pepper paste resulting in a salty/spicy, umami-filled flavor bomb! Right now we carry the La Quercia Brand who makes artisan-cured meats out of Iowa.

The flavor possibilities in cooking, however, are almost endless. Last week at the DLM Culinary Center, we added a small, pea-sized amount to fill our arancini in our Sicilian class. Over the weekend, I scooped up my poached eggs and smeared some on our Farmhouse Bread. Its helps add depth to any bean dish, and adding a teaspoon or two while sautéing onions and garlic ramps up flavor and adds a hint of spice to any sauce. Be bold and add some to help add a salty, slightly spicy flavor to any dish (it is especially good on pizza)!

Our new line of eyebobs were featured in February’s InStyle magazine. We agree-there is nothing like a pop of color to brighten up the drab days of winter! We are always looking for our readers, and so (alas!) are our customers! So why not have the coolest readers available?

I am excited to introduce our first vegan protein in our Gourmet Take Away case! We found this incredible tasting vegan soy protein that is simply delicious. We toss it with our Chinese-style sauce and scallions. I know what you are thinking, but believe me this is really good! Please come in and ask to try a piece. It would make a great dinner along with some steamed rice and stir-fried veggies!

New! Gluten-Free Naples Pizza Crust

After months of experimenting with a variety of gluten-free doughs and crusts that would work in our Naples-Style ovens, we found the one in our own backyard.

Flavor comes first here at DLM, so many doughs didn’t make it past step #1. Next was the challenge of getting a GF dough that would not only survive in a 700+ degree oven without scorching the bottom, but have the ability to be both delicate and have a chewy texture distinctive in Naples-Style crusts. It was a lot to ask for.

Note to self — count on your good friends! Chef Liz at Wheat Penny Oven and Barmakes beautiful California-style pizzas that are simply delicious from scratch. If you haven’t had the pleasure of dining there, go! Liz has had an incredible cooking career and the fact that we have her in Dayton now is like winning the lottery for local food culture. She has spent months refining her gluten-free dough and was generous enough to work with us to make it happen “DLM style.”

We think you will love having the gluten-free option so much that we are even going to sell the par-baked crusts for you to take home and make your own glorious gluten-free pizza at home. Thanks Liz!

Dorothy Lane Market Unveils New Culinary Center

After four months of renovation, DLM unveiled its state-of-the-art Culinary Center located at 6161 Far Hills Ave. DLM chose to renovate their School of Cooking from the ground up, giving a modern, clean feel to the new facility that can now hold up to 64 guests.

The DLM Culinary Center is available for private events, parties, and team building sessions. With summer classes beginning in June, the DLM Culinary Center will offer more than 40 cooking classes and several kids’ cooking camps during the three-month schedule.

Please join us for an open house on Friday, June 20 any time between 3–7 p.m., where light refreshments will be served. Look for special pricing on our new lines of fantastic merchandise!
Our regular DLM Culinary Center hours are 10 a.m. to 3 p.m. Monday through Friday.

Pecorino-Kale-Salad

Farro and Roasted Mushrooms
Nutty and good-for-you whole grain farro is tossed with slow-roasted fresh mushrooms for a side dish that sings with earthy flavor. I like it served room temperature, but this could be heated up for a side dish alongside a charred steak or tossed cold into your favorite lettuce salad.

Old-Fashioned Chicken Salad
We are Dayton’s expert on all things Chicken Salad- making several varieties from scratch every day in our kitchens. So why add another one? One reason is because we’ve listened to a couple folks who have requested no onions. Another nostalgic reason is that I grew up eating this particular version at my favorite Windy City department store. It has that old fashioned creamy and rich texture with no “weird” stuff in it like onions, bell peppers, or anything else that is not child or grandma friendly.

Hasselback Potatoes
These fun individual potatoes are cut like an accordion on purpose! All those edges lend a crisp texture outside, while remaining tender and moist on the inside. We drizzle Yukon gold potatoes with clarified butter and season with sea salt and black pepper — perfect with whatever you are serving for dinner tonight!

Pecorino Kale Salad
Fresh kale lightly tossed with Pecorino Romano cheese, toasted almonds, and sweet black currants. We dress this healthy salad lightly with DLM’s Organic Olive Oil and organic lemon juice. This salad is just so good I keep eating it. I love when food is not only good for you, but delicious!

Dill Pickle Dip
OK, I admit that I get extremely disappointed when my lunch doesn’t automatically come with a pickle. And I like a little hamburger patty with layers of dill pickles on it. If you are with me here on the pickle planet, this dip has your name all over it! Briny, vinegary, and just plain delicious — try it with pretzels or your favorite potato chip!

Individual Turkey Meatloaf
A family favorite recipe, we take our local fresh turkey and create a mini meatloaf that is perfectly sized and ready right now for dinner. They reheat beautifully and make a killer meatloaf sandwich when sliced. We’ve topped them with DLM’s own ketchup for a taste that will please everyone.
